Я бы предложил украсить (а не напрямую расширить) EntityManager, поскольку он теряет связь между вашей реализацией и унаследованным компонентом.
Чтобы иметь возможность отличать сущности, имеющие отношение к арендатору, внедряют / расширяют эти классы от interface или mapped superclass,
